I LOVE a good brownie. I’ve tasted a lot of them and I still think the recipe I use is the best I’ve ever tasted. #humblebrag. Last week I decided to spice it up a bit and bake a blueberry and walnut chocolate brownie. It definitely didn’t disappoint! Although there was one fussy husband with a sad look on his face when he saw berries on the top. Seriously, who doesn’t like berries?!
For this recipe you will need:
- 125g butter
- 200g dark chocolate (I use Cadbury’s Energy)
- 1/2 c castor sugar
- 2 eggs
- 1 1/4 c flour
- 200g Top Deck chocolate (or 100g milk and 100g white)
- 1/2 c walnuts
- 1/2 cup blueberries (fresh or frozen)
Melt butter and dark chocolate in a pot together. Stir until melted. Cool slightly and add sugar and eggs, then flour.
Fold in remaining chocolate, walnuts and half of the blueberries. Spread mixture into 20cm square pan. Sprinkle remaining blueberries on the top. Bake at 180 degrees celsius for around 25 minutes. I tend to undercook it so it’s gooey in the middle rather than over cook it so it dries out.
Yummy! Serve up with some cream or yoghurt and dig in!
