Ahhh… Valentine’s Day. The stores use it as a way to make an extra buck or two with love hearts and flowers scattered around the isles. Poor men get conned into buying those extra large teddy bears and and a bunch of overpriced roses for their lady or risk the chance of being put in the naughty corner for the next week. What are you supposed to do with a 6ft stuffed animal anyway? I prefer a bit of quality time with my farmer and would rather spend money on more important things. Like a couch. Or pot plants. I’m not fussy! Anyway, today I wanted to share these choc-mint fudge bites for Valentine’s Day. They super quick and easy and are way more personal than that teddy bear you’ve been eying up. Did I mention they’re delicious too? These are PERFECT for your sweetheart or your family members and friends. This recipe is adapted from Chocolate, Chocolate and More‘s 3 Minute Fudge.
You will need:
- 1 can of condensed milk
- 2 cups of chocolate chips
- 1 tablespoon of peppermint essence
- chopped nuts
Put condensed milk and chocolate chips in a microwave safe bowl. Heat on high power at one minute intervals, stirring each time. Heat until almost all the chocolate chips are melted. Add the peppermint essence and stir well. Sprinkle chopped nuts into the bottom of silicone mini-muffin pans and pour mixture evenly into each hole. Refrigerate for at least 30 minutes before popping the fudge bites out. These are best kept in the fridge as the melt quickly.I packaged these cuties up in a cellophane bag with a homemade gift tag. I have them hidden in the veggie bin for Valentine’s Day because let’s be real, hubby will never find them there!We’re going to the rodeo with my family on Valentine’s Day and I’m soooooo excited! I’ve been hanging out for this for about a month now and the day is almost here! My latest Netflix craze is Heartland (best TV show EVER) so I’m kind of horse obsessed right now. What are your plans?

Oh these sound yummy and so easy to make. I have never made anything with peppermint essence. Do these taste anything like Andies Chocolate Mints? I will have to give these a try. Pinning!
