Base:
- 1 cup cashew nuts
- 1/2 cup almonds
- 1/2 cup coconut
- 1/2 cup cacao
- 1/2 cup coconut oil
- 1/2 cup honey
Blitz dry ingredients. Melt coconut oil and honey together. Mix through dry ingredients. Press into 20cm square tin. Refrigerate.
Centre:
- 2 cups cashew nuts
- 1 cup coconut
- 10 drops peppermint oil
- 1/4 cup butter
Soak cashew nuts for an hour. Drain. Blitz with coconut. Melt butter, add in peppermint oil. Stir through other ingredients. Pour over base layer. Refrigerate.
Topping:
- 1/2 cup coconut oil
- 1/4 cup cacao
- 1/4 cup honey
Melt ingredients together. Pour over base. Refrigerate.
