Today I’m sharing a recipe for these yummy energy seed balls. They have great ingredients like chia seeds, flax seeds and sunflower seeds. They last ages so I make a big batch and have a few with my lunch every day!
You will need:
- 2 cups oats
- 2/3 cup desiccated coconut
- 1/4 cup sunflower seeds
- 1/4 cup flax seeds
- 1/4 cup chia seeds
- 1/4 cup cocoa
- 1/4 cup dark chocolate chips
- salt
- 1/2 cup coconut oil
- 2 tbsp stevia
- 1/4 cup honey
- 1/2 cup peanut butter
In a large bowl, combine oats, coconut, seeds, cocoa, chocolate chips and salt. In a pot, melt together honey, coconut oil, stevia.
Pour melted mixture over the dry ingredients and stir in well. Mix in the peanut butter. Use your hands to mix it through thoroughly. Refrigerate for half an hour. This will make it easier to roll the mixture. Roll into small balls and voila! Store in an airtight container for up to two weeks. These are packed with so many yummy things! Yumm! Only I’m not convinced they will last 2 weeks in the fridge. Pretty sure I will have eaten them all before then :) Thanks for the recipe.
