Some of you may know that I have a few hens and they persistently lay everyday. 3 hens, 7 days, 21 eggs a week, which is quite a few for only the two of us! I’m always on the look out for new ways to use up all those eggs. Then I had a brainwave and decided to make some ice cream with a twist. Fruit puffs are usually reserved for lolly cake but I thought I’d try find a new use for them. Result: success!
You will need:
- -4 eggs
- -1/2c castor sugar
- -300ml cream
- -1tsp vanilla essence
- -2tbsp strawberry milkshake mix
- -1c fruit puffs
Beat egg whites until they’re stiff and form peaks. Add half the sugar and beat until glossy.
In another bowl, beat the egg yolks with remaining sugar until thick. Add vanilla essence. Whip cream in another bowl. Fold all three mixtures together.
Blitz the fruit puffs in a blender or food processor until most of it becomes a fine powder.
Add fruit puffs and milkshake mix to ice cream mixture and mix!
I sprinkled some more milkshake mix on the top before putting it in the freezer to set. I allowed at least 5 hours.
