Mmmm, doesn’t that picture make you wish you could tuck your lips around a piece of this quick and easy chocolate cheesecake right now? Well good news my friend, this cheesecake recipe only takes little skill and only four hours to set. You’ll be treating yourself in no time!
For this recipe you will need:
- 1 250g packet of chocolate chip biscuits
- 100g butter
- 250g cream cheese
- 100g castor sugar
- 100g dark chocolate
- 300ml cream
- 1 tsp vanilla essence
Start by crushing the biscuits into a fine crumb. You can do this by hand with a rolling pin or in a food processor. Melt the butter and add to the crumbs, mixing together. Press into a 23cm round tin. Pack the crumbs down firmly by pressing down with your fingers. The mixture may seem quite dry, but don’t add extra butter or the base will be too had to cut. Put the tin in the fridge so the base sets.
Beat the cream with sugar and vanilla until peaks form and cream is thoroughly whipped. Put the bowl aside and in a seperate bowl melt the chocolate. Once it is melted, mix the cream cheese in and beat. Add the chocolate cream cheese mixture into the cream and beat again. Smooth the mixture over the base and chill for at leat four hours. Once the cheesecake sets,melt additional chocolate and drizzle over top with a knife.
I broke up some more chocolate and scattered it around the plate. Doesn’t it look divine?!
