There’s something about rainbow frosting that just makes cupcakes taste ten times better. No joke people! I made these once for my students while I was on placement and one particular five year old girl was ecstatic that I had made “unicorn cupcakes”. So here we have it… Rainbow ‘Unicorn’ Cupcake Frosting.
You will need:
- 250g softened butter
- 600g icing sugar
- 1 tsp vanilla essence (or other flavour)
- 1-2tbsp milk
- different food colourings
The first thing you want to do is beat the butter by itself. Do this for a few minutes until it is paler in colour. Add icing sugar, a cup at a time until combined. The trick to good buttercream is LOTS of beating. Mix in the vanilla essence. At this point test the consistency of the frosting. Get a spoonful and try to shake it off. It should be quite firm and stick to the spoon. If needed, add a few tablespoons of milk.
Divide the mixture into three equal portions and add desired colour. I love pastel blue, yellow and pink combination!
For the same look as mine, use a big star tip in your piping bag. Put equal spoonfuls of each colour frosting in your piping bag. Aim to keep them at roughly the same level in the bag.
Push all the frosting towards the tip. Pipe out the frosting until you get an even portion of each colour coming out. I piped from the outside of the cupcake, to the inside, creating a basic swirl.
This technique could be used for a variety of colours and even flavours! These are perfect for something a bit special and would be perfect for a little girl’s birthday party.
