When I was growing up, one of my very favourite Christmas treats were these little balls that my Mum made called Peppermint Creams. I remember one particular Christmas where I ate way too many and may or may not have been told to back away from the bowl. Shame on me! Anyway, the other day I was about to whip up a batch when I realised I was missing a key ingredient, peppermint essence, hence strawberry marshmallow creams were born.
What you need for this recipe (makes about 50 balls)
- 50g cream cheese
- 50g butter
- 500g icing sugar
- 1 packet of chocolate biscuits
- 1 cup of marshmallows cut into small pieces
- 2 tablespoons strawberry essence
- 250g dark chocolate
First you need to mix the cream cheese and softened butter together. While these are mixing, crush the biscuits into large crumbs. Add these, the marshmallows and some of the icing sugar into the mixture. Add remaining icing sugar until you get a consistency that can be easily rolled. At this point, add the strawberry essence. I usually add little bits, mix it in, taste and repeat until perfect. Roll into small balls, place on baking paper and pop into the fridge to cool.
Once chilled, the next step is chocolate covering them! To melt the chocolate, pour boiling water into a large bowl. Place chocolate pieces in a smaller bowl that fits inside the bigger one. Stir until melted and smooth.
Use two teaspoons to cover the ball with chocolate, and then place on baking paper to set. Put them in the fridge to set fully.
These strawberry marshmallow creams are soon to be a new Christmas favourite! I’m thinking that I’ll whip a batch of these up, and then a batch of peppermint ones covered in white chocolate.
